&lt;p&gt;1 pkg jello (4 serviing size)&amp;nbsp; - my favorite is strawberry&lt;/p&gt;
&lt;p&gt;2/3 cup boiling water&lt;/p&gt;
&lt;p&gt;1/2 cup cold water&lt;/p&gt;
&lt;p&gt;ice cubes&lt;/p&gt;
&lt;p&gt;3 1/2 cups cool whip (thawed) -- CAN TRY THE FAT FREE INSTEAD&lt;/p&gt;
&lt;p&gt;1 cup fruit - sliced or diced (my favorite is sliced strawberries)&lt;/p&gt;
&lt;p&gt;1 prepared 9 inch graham cracker or chocolate crust -- I THINK GRINDING UP REDUCED FAT OREOS IN THE FOOD PROCESSOR &amp;amp; PRESSING THEM IN A PIE PLATE WOULD WORK, BUT HAVEN&amp;#39;T TRIED...MAYBE YOU CAN EVEN FIND A LOW FAT PRE-MADE PIE CRUST SOMEWHERE...NOT SURE&lt;/p&gt;
&lt;p&gt;&amp;nbsp;&lt;/p&gt;
&lt;p&gt;Completely dissolve gelatin in boiling water.&amp;nbsp; Combine cold water &amp;amp; ice cubes to make 1 1/4 cups.&amp;nbsp; Add to gelatin, stirring until slightly thickened.&amp;nbsp; Remove any unmelted ice.&amp;nbsp; Using wire whisk, blend whipped topping.&amp;nbsp; Fold in fruit.&amp;nbsp; Chill until mixture mounds.&amp;nbsp; Spoon into pie crust.&amp;nbsp; Chill about 2 hrs.&amp;nbsp; Garnish w/additional fruit if desired.&lt;/p&gt;

&lt;p&gt;1 small tub of fat free whipped topping&lt;/p&gt;
&lt;p&gt;1 pkg of fat free or reduced fat&amp;nbsp;cream cheese&lt;/p&gt;
&lt;p&gt;1 cup of sugar&lt;/p&gt;
&lt;p&gt;1 ready made - reduced fat pie crust&lt;/p&gt;
&lt;p&gt;Just mix the sugar and cream cheese together, then stir in the whipped topping.&amp;nbsp; Fill mixture in the pie crust and regrigerate for one hour and serve.&amp;nbsp; You can top with fresh fruit or leave plain.&amp;nbsp; Absolutely delicious, simple and best of all... I know pumpkin pie isn&amp;#39;t too bad, at least compared to pecan pie or cheesecake. I was thinking of making meringue cookies -- that&amp;#39;s always a good one because they&amp;#39;re very low fat. Anyone else have suggestions? Cookies or pie in particular?
