Tis' the season....that time of year where us Upstate NYers can't wait to get outside and be rid of all that rotten snow!  Time for some serious grilling!  Here's one of many kabob receipes I have and love....hope you enjoy it too.

1 lb. chicken *** (boneless/skinless/uncooked)

1/2 med pineapple

1 med green pepper

1 med sweet red pepper

1 large spanish onion

1/4 cup pineapple juice (or orange juice)

3 med garlic cloves, minced

1 tbsp low-sodium soy sauce

1 tsp olive oil

2 servings cooking spray (5 one-second sprays per serving)

2 cup cooked white rice (kept hot)

1.  Cut each chicken ***, pineapple, pepper and onion into approx. 24 one inch pieces. (I cheated and used a can of pineapple and saved the juice from the can).  Combine chicken, pineapple juice (or orange juice), garlic, soy sauce & oil in large non-metallic bowl; marinate in fridge for at least 1 hr and up to 24 hrs.

2.  Preheat grill.  Lightly coat veggies with cooking spray.  Thread veggies, pineapple and chicken onto 8 skewers.  Brush with marinade. 

3.  Cook white rice and keep hot.

Grill over med-hot coals until chicken is completely cooked (about 8 - 10 min), turning kabobs approx every 2 mins so they're cooked evenly. 

Yields 2 kabobs and 1/2 cup rice per serving.  Weight watchers points = 6 pts  (Sorry, this receipe didn't have the calories, etc. with it)

*  In case of nasty weather, the receipe can be done by broiling in oven about 5 inches from heat for 8 - 10 min.
