  • This seems like quite a different dish! I'm going to try it sometime this week! the way in which i have salmon: I like to bake salmon in a little foil wrap in the oven. I put the salmon down on the foil and put orange marmalade on it and then squeeze some fresh lemon and orange on top. the last time I cooked it I put some broccoli in the wrap just to try it. It turned out great! and I cooked some rice on the side and I cooked some extra broccoli. my boyfriend and I love salmon and so far that's our favorite way to cook it! : )

  • Yumm... This sounds good!  My mother makes a salmon loaf with similar ingredients except no mushrooms and no cheese.  She bakes it like a meatloaf and it is yummy!

    I like the idea of putting it in a crockpot.  I have not been a big fan of the fat free cheeses--I find they don't melt.  Any suggestions?

  • Sounds good...however, seems like you should add some liquid in the crockpot?

    But willing to give it a try Friday, can be baked like a loaf also I guess.

  • How about this receipe - another crockpot receipe (but I haven't yet tried this one, but plan on it)...

    Salmon Cheese Casserole

    14 3/4 oz can salmon w/liquid

    4 oz can mushrooms, drained

    1 1/2 cups bread crumbs

    1/3 cup eggbeaters (or comparable "fake" egg mix)

    1 cup grated fat free cheese

    1 tblsp lemon juice

    1 tblsp minced onion

    Flake fish in bowl, removing bones.  Stir in remaining ingredients.  Pour into lightly greased slow cooker (non-stick, non-fat spray).  Cover and cook on low 2 1/2 - 3 1/2 hours.

    Makes 6 servings.  Ideal slow cooker is 2 qt size. 

    150 calories, 4 total fat (1 saturated), 1 fiber, 19 protein OR 3 pts per serving for the Weight Watchers fans.
