Portabella Mushroom

1 - 2 tblsp fat free balsamic vinegarette dressing

1 slice roasted red pepper

1 Weight Watchers mozzerella stick (1 pt version)

In a paninni pan or on George Foreman style grill take 1 portabella mushroom (remove & toss stem if still attached), drizzle with fat free balsamic vinegarette dressing (I use Maple Grove Farms of Vermont), then place a roasted red pepper on top (I used the kind from the jar) and cook w/press on top (or w/closed lid on Foreman grill).  Cook about 4-5 min...then slice Weight Watchers mozzerella stick and place on top of mushroom (they don't melt too well).  Eat alone or on a bun of your choice.

110 cal, 2 fiber and 2.5 fat (2 pts for Weight Watchers)

(For calorie info above, my dressing I used is 5 cal a serving and 0 fat).
