This is a good recipe. I do something similar, if not the same.  I love chicken, more than beef. I just wish my husband did too, but oh well... sometimes he just has to eat what I put on the table OR he can cook himself!  LOL

Another crockpot meal that's easy, filling, and good for you.

Makes 6 servings.

2 15 oz cans corn, drained OR 1 frozen corn (lg bag)

2 cans black beans, rinsed & drained

16 oz jar chunky salsa (I used a more - probably another 1/2 jar just cuz I like it)

6 boneless, skinless chicken breasts

1 cup low fat shredded cheddar cheese (can use no-fat cheese too)

1.  Combine corn, black beans & 1/2 cup salsa in slow cooker.

2.  Top w/chicken and pour remaining salsa over chicken.

3.  Cover & cook on high 3 - 4 hrs or low 7 - 8 hours.

4.  Sprinkle w/cheese.  Cover & cook 5 minutes more to let cheese melt on top.

Can be eaten alone or over rice (brown is best for getting the fiber in).

*  Bonus -- could use less chicken and about 24 oz. salsa and at the end of the cooking cycle shred the chicken w/a fork to make a mexican style chicken stew. 

Calories 370, Fat 6 g (2 satured), 39 g protein, 7 g fiber.  (7 pts for Weight Watchers people)
