  • Yes, actually....lots really - I love trying new receipes.  Another one we recently tried is Southwestern Chicken.  Put the receipe here on the site for you.  Let me know if you try it and like it.

  • Thank you very much!!! It sounds delicious and now I know what I am making tomorrow night! Got any more great recipes like this??? hmmm?

  • Funny you should ask..........we had it for supper tonight and I loved it.  My husband is not a chicken person (red meat and potatotes and gravey suit him just fine, thank you), but nonetheless he said it was good.  It was moist, tender and had a great flavor. I used low-fat chicken stock instead of the bouillon cube and added an entire can, along with additional spices, so I'd have enough "gravy" to go over my husband's potatoes.

  • I haven't been on for a few days to do any posts.  Did you try the chicken?  If so, did you like it?

  • Yummy. This recipe sounds good. I love chicken and crock-pot cooking is a great way to get a good meal on the table without a lot of work. I HATE cooking. I am no fan of "playing" with food, as I think of it. I don't take naturally to cooking and follow most recipes to a T because of my lack of interest and lack of imagination. Thanks for this recipe.

  • Makes 4 servings; 3 1/2 Qt. Crockpot is best

1 to 2 tblsp olive oil or Endova oil

    4 boneless skinless chicken breasts

    oregano; seasoned salt; black pepper

    1/4 cup water

5 tblsp (or a little more) lemon juice

2 cloves garlic (or a little more)

1 tsp low sodium chicken bouilon

    1 tsp parsley

Place oil in frying pan and add chicken; sprinkle oregano, seasoned salt & black pepper on chicken and brown both sides, then transfer chicken to slow cooker.  Place water, lemon juice, garlic & bouilon in skillet - bring to boil loosening browned bits from skillet, then pour over chicken.  Cover & cook on high 2 - 2 1/2 hrs OR low 4-5 hours.  At end of cooking cycle, sprinkle parsley over chicken and baste chicken w/juices in crockpot.  Chicken will be so tender it falls apart and very, very moist.  I also drizzled the juices over the chicken when I ate it.  YUMMY!!  EASY!!

I am a big fan of crockpot cooking because a lot of times it only entails one pot to clean (in this case 2) and because it saves so much time, yet foods are sooo good.  Hope you enjoy it -- we did -- even the kids!
